For mornings that need a bit more convincing. Roasted darker for a heavier, richer cup — big chocolate and treacle, low acidity, and plenty of punch through milk.

Fill the hopper with beans and let the machine do the rest. If the coffee tastes thin, nudge the grinder one step finer.
Use around 18g for a double and aim for roughly 36g out in 25–30 seconds. Quicker than that and it will taste sharp; slower and it will taste bitter.
Use about 60g per litre, pour water just off the boil, stir once and leave it four minutes before pressing slowly.
Around 60g per litre again. Wet the paper first to rinse it, then pour in stages rather than all at once.
Fill the base with hot water to just below the valve, level the basket without tamping, and take it off the heat as soon as it starts to hiss.
Been through three subscriptions and this is the first one I don’t have to manage. It turns up, it’s good, that’s it.

“Does a 1kg bag stay fresh once it’s open?”
